Part 1 of 3: Making the Batter
1Mix the wet ingredients. In a large bowl, beat the sugar and butter with a stand or hand mixer.
2Incorporate the yogurt, egg, and vanilla into the bowl.
3Add the pineapple and carrots last. Mix everything thoroughly.
4Mix the dry ingredients. Use a medium bowl to combine the cinnamon, flour, baking soda, baking powder, salt, and nutmeg with a metal wire whisk.
5Incorporate the two bowls. Sift the dry ingredients into the wet ingredient bowl.
- For the best results and easier stirring, sift a small amount at a time between stirring.

1Combine the frosting ingredients together (except the walnuts). In a small bowl, use a metal wire whisk to whip everything thoroughly until you achieve a smooth mixture.
2Dip the doughnuts into the frosting.
3Garnish the doughnuts. Before the frosting sets, sprinkle some chopped walnuts around.
